Chocolate Peanut Butter Chia Pudding

 
 

Chocolate Peanut Butter Overnight Chia Pudding:

½ cup plant based yogurt

½ cup unsweetened coconut milk

¼ cup chia seeds

1 tablespoon cacao powder

1 tablespoon plant-based  vanilla protein

1 tablespoon peanut butter

1 medjool date

½ teaspoon vanilla extract

Cinnamon, to taste

Optional toppings:

Nut and Seed Granola

1-2 tablespoons cacao nibs 

Nut butter

Blueberries

Extra cinnamon

Add chia seeds, yogurt, and coconut milk to jar and stir. Let sit 5 minutes and stir again to avoid clumps. Add in the remaining ingredients and stir until combined. Let sit in fridge overnight or for at least 4-6 hours. Place ingredients in high speed blender and pulse until smooth and creamy (optional). Top with your choice of toppings and enjoy!
