Garlic and herb cashew cheese

Ingredients

  • 1 cup cashews, soaked at least 4-6 hours (preferably overnight)

  • 2 tablespoons olive oil

  • 1/4 cup water

  • 1 1/2 tablespoons nutritional yeast

  • 1 garlic clove minced

  • juice from 1/2 lemon

  • garlic powder

  • basil

  • rosemary

  • a few sprinkles of crushed red pepper (can add more if prefer more of a kick)

  • sea salt and pepper to taste

Instructions

  1. Place soaked cashews in a high-speed blender or food processor with oil, water, lemon juice, nutritional yeast, garlic clove, and spices. Process until creamy and smooth.

  2. Place in jar and store in fridge. Enjoy!
