Chocolate Fudge Avocado Brownies
These brownies are so fudgy- they just melt in your mouth! Not to mention free from refined sugar, dairy, + grains.
Fudgy avocado brownies
Ingredients
1½ large (or 2 small) extra ripe avocados
1 large egg + 1 egg white
½ cup cacao powder
½ cup coconut sugar
Maple syrup, to taste
¼ cup almond flour
1 tsp vanilla or almond extract
Pinch of sea salt
1.5 ounces good-quality dark chocolate (I prefer Eating evolved dark chocolate bars), finely chopped
Optional peanut butter drizzle: 1-2 tablespoons unsalted peanut butter
Instructions
Preheat oven to 350 F.
Add 1 1/2 large avocados with vanilla extract, coconut nectar, and a splash of maple syrup to food processor or blender and blend until there's no chunks.
Whisk egg and add to blender with almond flour, almond butter, cacao powder, baking soda, and pinch of sea salt.
Pulse until smooth and creamy.
Fold in dark chocolate chunks (I used @eatingevolved) and add to baking dish.
Bake for about 10-12 minutes.
Optional: add peanut butter drizzle on top and extra chocolate chunks
