Cashew Chocolate Chip Cookie Dough Bites (v. I and II)
Cashew chocolate chip cookie dough bites (version 1)
1/2 cup walnuts
1/4 cup cashews
5-6 medjool dates, pitted
1 tablespoon chia seeds
1/4 cup peanut butter, unsalted and unsweetened
1 tablespoon coconut oil, melted
1-2 tablespoons vanilla plant-based protein powder
1 teaspoon vanilla bean extract
1/4 cup dark chocolate squares, chopped
1/2 teaspoon maca powder (optional)
Dash of cinnamon
Pinch of sea salt
Place walnuts and cashews in a high-speed blender or food processor and pulse until a fine consistency is reached Add in dates and coconut oil and pulse until a sticky dough begins to form. Add in remaining ingredients and blend until ingredients are well combined. Roll into balls and place in freezer for 5-10 minutes to allow to set. Store in fridge or freezer. (Makes about 8-10).

1 tablespoon coconut oil
1/4 cup peanut butter
3 tablespoons dark chocolate chips (I used dairy-free enjoyLife brand)
1 tablespoon vanilla protein
1 tablespoon chia seeds
1 teaspoon sweetener (honey or maple syrup)
1 teaspoon vanilla extract
1 tablespoon Goji berries (optional)
Dash of cinnamon
Pinch of sea salt
