Who doesn’t love nice and warm chocolate chip cookies?? I love the whole process of making cookies. From being in the flow of baking to making the whole house smell so sweet! I made an upgraded version that will leave you without a sugar crash and still has a nice buttery taste with the perfect sweetness. Not to mention, they are refined sugar free, gluten free, and have a vegan option! They are so thick and fluffy, they will melt in your mouth. I hope you enjoy!

 

Chocolate chunk cookies (GF, vegan option)

1/2 cup gluten-free rolled oats

1/4 cup coconut flour

1/4 cup coconut oil, melted

1/4 cup nut butter

1/4 cup coconut nectar (can sub maple syrup)

1 egg, beaten (**can sub flax egg, see note)

1 teaspoon vanilla extract

1 scoop grass-fed collagen (optional)

1 teaspoon baking powder 

1/4 teaspoon sea salt

Dash of cinnamon 

1/3 cup dark chocolate chips

Add all ingredients except the egg (or flax egg) and baking powder to a medium sized mixing bowl and stir until well combined. Cover and place in fridge for 30 minutes (Do not skip this step! Make sure to wait to add the baking powder and egg after the 30 minutes. Meanwhile, preheat oven to 350 degrees. Line a baking sheet with parchment paper. Once dough is ready, remove from fridge and add egg and baking powder. Stir until combined. Form dough into cookies and place on baking sheet (makes about 10 cookies). Bake for 10-12 minutes (shorter if you like them softer).

**For flax egg, add 1 tablespoon flax seeds and 3 tablespoons of water to bowl. Stir and let sit 5 minutes.
