Chocolate “Frosty”
Chocolate “Frosty”
1.5 cups coconut milk (can sub any nut milk)
1/2 cup coconut water
1/4 cup chia seeds
1/2 banana, frozen
1/4 avocado, frozen
3 frozen zucchini pieces or cauliflower florets (optional)
1-2 medjool dates, pitted
2 tablespoons peanut butter
1/2 teaspoon vanilla extract
2 tablespoons raw cacao power
1 tablespoon plant-based protein powder
1/2 teaspoon cinnamon
1/2 teaspoon maca (optional)
Handful of nut milk cubes (or ice cubes)
Add 1 cup of non-dairy milk of choice (saving 1/2 cup for later) and chia seeds to a bowl and stir. Let sit 5 minutes and stir again to avoid clumps. Place in fridge overnight or at least 1 hour. The next day, add the chia mixture to a high speed blender with remaining ingredients and pulse until smooth and creamy. Store any leftovers in a jar in the fridge. Enjoy!
