Cucumber Walnut Salad
I love this salad on a warm summer day! The cucumbers are so refreshing and pair well with the red onion and toasted walnuts. I like to keep the dressing simple with a drizzle of olive oil and balsamic vinegar and adding a spices for extra flavor. I try to avoid packaged dressings because they contain many added sugars, fillers, and gums. If you choose to get a pre-made dressing make sure you read the ingredients and stick with real ingredients that you can pronounce. I love Primal Kitchen’s salad dressings!
cucumber walnut salad
2 large handfuls of mixed greens
1/2 cucumber
1/4 cup red onion
1/4 cup walnuts
pumpkin seeds, for topping
dressing: olive oil, splash of balsamic vinegar, oregano and black pepper, to taste
Preheat oven to 400.
Place walnuts on baking sheet and bake for 3 minutes, keeping an eye on them (they can burn fast).
Once walnuts are toasted, let cool for 5 minutes before topping to salad.
While walnuts are cooking prepare a medium sized mixing bowl and mixed greens.
Add toppings and drizzle dressing. Toss salad and enjoy!
