Cucumber Walnut Salad

I love this salad on a warm summer day! The cucumbers are so refreshing and pair well with the red onion and toasted walnuts. I like to keep the dressing simple with a drizzle of olive oil and balsamic vinegar and adding a spices for extra flavor. I try to avoid packaged dressings because they contain many added sugars, fillers, and gums. If you choose to get a pre-made dressing make sure you read the ingredients and stick with real ingredients that you can pronounce. I love Primal Kitchen’s salad dressings!

  • 2 large handfuls of mixed greens

  • 1/2 cucumber

  • 1/4 cup red onion

  • 1/4 cup walnuts

  • pumpkin seeds, for topping

  • dressing: olive oil, splash of balsamic vinegar, oregano and black pepper, to taste

  1. Preheat oven to 400.

  2. Place walnuts on baking sheet and bake for 3 minutes, keeping an eye on them (they can burn fast).

  3. Once walnuts are toasted, let cool for 5 minutes before topping to salad.

  4. While walnuts are cooking prepare a medium sized mixing bowl and mixed greens.

  5. Add toppings and drizzle dressing. Toss salad and enjoy!
