Collard Wrap v. II
Collard wraps are my new favorite! They are high sources of Vitamin A and K, great for reducing inflammation and supporting cardiovascular health. In addition, they are packed with antioxidants and help lower glucose levels. Great alternative to grain wraps, give it a try!
REcipe hummus veggie collard wrap
Ingredients:
1 collard leaf
1-2 tablespoons hummus
1 tbsp dairy-free pesto
Purple cabbage
2 dried figs (soaked then chopped)
1/4 avocado
handful of spinach
handful of microgreens
mustard seeds
Instructions:
Rinse collard leaf and cut stem off bottom. Pat dry with paper towel. Spread hummus and pesto layer and add toppings of. Sprinkle mustard seed on top.
