Maca Energy Bites
Maca energy bites
Ingredients:
1 cup nuts (ex: 1/2 cup walnuts, 1/2 c hazelnut flour/meal, 1/2 c almonds)
1/2 cup pitted dates
1 tablespoon coconut oil, melted
1 tablespoon peanut butter
1 tablespoon coconut nectar (can sub honey or maple syrup)
1/8-1/4 cup shredded coconut
2 tablespoons goji berries
1 tablespoon vanilla protein powder
1 scoop collagen (optional)
2 teaspoons beetroot powder (optional)
1 teaspoons maca powder
1/4 cup cacao nibs (can sub dark chocolate chips)
a few shakes of cinnamon
Instructions
Place nuts in blender and pulse until becomes texture of coarse sand. Add in shredded coconut flakes, goji berries, protein, collagen, maca, and beetroot powder, and cinnamon, and pulse until combined. Add in dates, coconut oil, and peanut butter and pulse until a sticky dough forms. Add to mixing bowl and mix in coconut nectar and cacao nibs. Form into balls and place in fridge to set. Store in fridge or freezer!
