Paleo Sweet Potato Chili
This hearty sweet potato chili is one of my favorite one-pot meals. Cozy up with this on chilly day or really any time of day! I love mine served with avocado and a side of tortilla chips.
Paleo Sweet potato chili
1 pack Organic Chicken sausage (I used Bilinski’s Cilantro Lime flavor)
1 medium sweet potato, diced
1 green bell pepper, diced
1 pack baby Bella mushrooms, diced
3 medium long carrots, chopped
3-4 garlic cloves, minced
3 celery stalks, chopped
2 tablespoons avocado oil
1/4 cup, plus 1 tablespoon water
1 28oz can whole peeled tomatoes
1 can tomato sauce (optional)
Juice from 1/2 lime
1 large handful cilantro
1 teaspoon cumin
1/2 teaspoon garlic power
1/2 teaspoon onion powder
1/4 teaspoon chili powder
1/8-1/4 teaspoon cayenne
Sea salt and black pepper, to taste
Optional toppings:
Avocado
Cilantro
Lime
Nutritional yeast
Add avocado oil to a medium pan. Place on stove over medium heat and add in chopped sweet potatoes. Cook for 5-10 minutes, or until becomes softened, stirring occasionally.
Add in remaining veggies garlic cloves, and 1 tablespoon of the water. Continue to cook over medium heat for 5-10 minutes, stirring occasionally.
While cooking, prepare chicken sausage. Add 1 tablespoon of avocado oil to skillet over medium heat. Add chicken sausages and cook until outsides start to brown and cooked all the way through. When finished cooking, chop into pieces and set aside.
Next, add in tomatoes and remaining 1/4 cup water to chili mixture. Add in spices and remaining ingredients. Stir until well combined. Top with toppings of choice and enjoy!
