Nut and Seed Granola
Recipe Nut and Seed GranolA
2 cups of mixed nuts/seeds of choice (walnuts, almonds, cashews, sunflower pumpkin, hemp, and chia seeds)
1 cup buckwheat groats
1/2 cup unsweetened shredded coconut
1/4 cup unsweetened dried fruit (dates, goji berries, mulberries)
2 tablespoons melted coconut oil
1-2 tablespoons sweetener of choice (coconut nectar, honey, maple syrup) **(depending how sweet you like it)
1 teaspoon vanilla bean extract
1 teaspoon cinnamon
optional: 1/2 teaspoon Countertop foods breakfast seasoning (or 1/4 teaspoon each of cardamom, nutmeg, and ginger)
pinch of sea salt
1. Preheat oven to 350 F.
2. Line baking sheet with parchment paper.
3. In a medium sized mixing bowl, add nuts/seeds of choice, unsweetened coconut flakes, flax seed, spices, and sea salt. Stir ingredients.
4. In a separate bowl, add melted coconut oil, coconut nectar, and vanilla extract. Whisk to combine.
5. Incorporate wet ingredients into dry and stir until combined. Slowly add in dried fruit of choice. Stir to combine.
6. Spread evenly onto parchment paper. Using a separate sheet or parchment paper or back of a spatula, gently press to flatten mixture. Bake for 10-15 minutes, or until golden brown.
7. Let cool completely. Once completely cooled, place in freezer for at least 10 minutes before breaking into clusters.
