Toasted Walnut Salad
Walnuts are rich in omega-3's and antioxidants, and taste amazing topped on salads!
Recipe toasted walnut salad
Ingredients
Salad
- 2 cups mixed greens
- 1/2 long carrot
- 1/4 cucumber
- 1/2 avocado
- 1/8 cup red onion
- small handful of Walnuts
Roasted brussel sprouts
- 1/2 cup chopped brussel sprouts
- 1 tbsp olive, avocado, or coconut oil
Dressing:
- lemon juice
- 1 Tbsp olive oil
- 1 tsp of Apple cider vinegar
- mustard seeds, to taste
- everything-but-the-bagel-seasoning, to taste
Instructions
Preheat oven to 400 degrees F.
Chop brussel sprouts using a sharp knife into halves
Bake for 15-20 minutes, flipping halfway through.
Once done, let cool, then add to large bowl with mixed greens, carrots, cucumber, avocado, red onion, walnuts, olive oil, lemon juice, apple cider vinegar, and seasonings. Toss, then serve!
