Power Crunch Salad

power crunch salad

2-3 cups mixed greens

Wild smoked salmon

1 medium whole carrot, skinned and shopped

1/2 cup raw broccoli

Red onion, chopped

3-5 olives

1 tablespoon@cooks_pantry beet kraut

1 tablespoon homemade pesto

1 tablespoon hummus

1 tablespoon pumpkin seeds

a sprinkle of leftover rice or quinoa

For the dressing:

1 tablespoon olive oil and 1/2-1 tablespoon balsamic vinegar

Place all ingredients in a medium sized bowl. Toss in dressing and enjoy!
